Introducing the&nbsp;very best<strong>&nbsp;<\/strong>piste-side purveyors \u2013 and their scrumptious takes on the good old egg &amp; flour classic. Sample the delights of their homemade salted butter fudge or Savoyard cheese varieties.&nbsp; \u2018The Fool\u2019s Lounge\u2019 may be the literal translation,&nbsp;but in our books, you\u2019d be a fool not to try this place.<\/p>\n\n\n\n<p>At home: Try a galette (a savoury form of&nbsp;pancake made by substituting plain with&nbsp;buckwheat flour)&nbsp;with melted Camembert,&nbsp;followed by&nbsp;Cr\u00eapes Suzette avec Grand Marnier, orange zest, sugar and butter. Several attempts on, genius struck and&nbsp;he completely scrambled the mix, threw in cherries and raisins, caked everything with icing sugar and served with a jar of plum&nbsp;<em>compote<\/em>&nbsp;as his own special creation. The medley was a hit, and dubbed <em>Kaiserschmarrn<\/em>; the emperor\u2019s mess. No less popular today, rhapsodies have been written for the Kaiserschmarrn at the Wirsthaus Zum Rehkitz, a 350-year-old Austrian guesthouse. You&#8217;ll often find <em>Kaiserschmarrn<\/em> severed with apple sauce or jam.<\/p>\n\n\n\n<p>At home: Forget pancake perfection \u2013&nbsp;throw a handful of raisins (chocolate chips, chunks of fudge, whatever\u2019s in the cupboard) into your mixture, fry in plenty of butter and chop as your cake starts to take shape in the pan. Serve with icing sugar and stewed plums or apples. Thick, buttery, vanillary stacks with&nbsp;an&nbsp;optional (<em>for some<\/em>) 3 eggs, 3 maple bacon rashers, 3&nbsp; sausages and toast of the Forks Breakfast to round off your meal.<\/p>\n\n\n\n<p>At home:&nbsp; Well worth the effort&nbsp;<strong>\u2013<\/strong>&nbsp;whisk 1\/2 cup milk, 1\/2 cup water, 1\/4 cup Greek yogurt, 1 egg and&nbsp;2 tsps vanilla together with 2 tbsps melted butter. Combine with 1 cup plain flour, 3 tbsps caster sugar and 2 tsps baking powder and stir until combined. The flames?&nbsp; The result of generous splashes of his staple ingredient, Savoy Rum. At \u00a31.50 for pancake, rum and trimmings like honey, walnuts, chocolate and all the jams known to man (fig and cherry, anyone?).&nbsp; What\u2019s not to love?<\/p>\n\n\n\n<p>At home: &nbsp;Add&nbsp;half the usual amount of batter to your pan, spread thinly and&nbsp;wait until small pores start appearing on the surface, then flip.&nbsp; It\u2019s probably best to leave the fire-handling to Angel, but nothing\u2019s stopping a generous glug of baileys or advocaat in that batter.<\/p>\n\n\n\n<div class=\"wp-block-image\"><figure class=\"aligncenter size-large is-resized\"><img decoding=\"async\" src=\"https:\/\/www.sno.co.uk\/blog\/wp-content\/uploads\/2021\/02\/87959028_1380456055471098_8596999684352901120_o-760x1021.jpg\" alt=\"Man frying a pancake with flames coming from the pan\" class=\"wp-image-6379\" width=\"640\" srcset=\"https:\/\/www.sno.co.uk\/blog\/wp-content\/uploads\/2021\/02\/87959028_1380456055471098_8596999684352901120_o-760x1021.jpg 760w, https:\/\/www.sno.co.uk\/blog\/wp-content\/uploads\/2021\/02\/87959028_1380456055471098_8596999684352901120_o-223x300.jpg 223w, https:\/\/www.sno.co.uk\/blog\/wp-content\/uploads\/2021\/02\/87959028_1380456055471098_8596999684352901120_o-768x1032.jpg 768w, https:\/\/www.sno.co.uk\/blog\/wp-content\/uploads\/2021\/02\/87959028_1380456055471098_8596999684352901120_o.jpg 1072w\" sizes=\"(max-width: 760px) 100vw, 760px\" \/><figcaption>Photo: Facebook.com\/Samokov-Hotel-Pancake-Man<\/figcaption><\/figure><\/div>\n\n\n\n<h2 class=\"wp-block-heading\">Andorra: Savory pancakes are the only way<\/h2>\n\n\n\n<p>Best in resort: Restaurant Arrels in&nbsp;<a href=\"https:\/\/www.sno.co.uk\/ski\/andorra\/soldeu\/\">Soldeu<\/a><\/p>\n\n\n\n<p>In one of the quirks of Andorran cuisine,&nbsp;cr\u00eapes are used in place of pasta in the well-loved&nbsp;<em>Cannelloni&nbsp;<\/em>dish; stuffed with tomato goodness, topped with b\u00e9chamel and sprinkled with cheese. &nbsp;They\u2019re&nbsp;one of the&nbsp;specialities of Michelin-starred Carles Gaig, super chef at the Arrels restaurant.<\/p>\n\n\n\n<p>At home: prepare&nbsp;your&nbsp;cr\u00eapes and set to one side,&nbsp;then fry onion, minced beef, red and green peppers before adding tinned toms and reducing.&nbsp; Fill crepes and roll to seal, then&nbsp;place in an&nbsp;ovenproof&nbsp;dish and&nbsp;cover in b\u00e9chamel. Heat until beautifully browned before piling with oodles of grated cheese. Let it golden and bubble.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Finland: The Pannukakku&nbsp;<\/h2>\n\n\n\n<p>Best in resort: Pannukakkutalo in&nbsp;<a href=\"https:\/\/www.sno.co.uk\/ski\/finland\/levi\/\">Levi<\/a>.<\/p>\n\n\n\n<p>The sky\u2019s the limit in Finland\u2019s ONLY pancake house, where 93 toppings include, chic\u00adken, ba\u00adcon, blue chee\u00adse, and\u2026 smoked reindeer (sorry Rudolph). The traditional Pannukakku&nbsp;is baked rather than fried. Previous sightings in Ortisei: in the gourmet Anna Stuben of the Hotel Gardena Gr\u00f6dnerhof, or sometimes on special request at the Costamula.<\/p>\n\n\n\n<p>At home:&nbsp;Mix 150g buckwheat flour&nbsp;with&nbsp;2 eggs, 250ml milk and some salt. Fry your batter on both sides and cut into little pieces,&nbsp;before sprinkling with&nbsp;icing sugar and serving with&nbsp;your favourite jam.
